Francesco Leone is the heir to a family of “carnacuttari” (offal sellers) from San Valentino Torio, in the province of Salerno, now in its fourth generation. His is an ancient profession, dating back to Bourbon Naples, when the nobility considered “‘o per e ‘o muss,” tripe and offal, to be discarded. The servants, who lived in hardship and struggled with daily survival, appreciated this food, then a humble commodity, now trendy.
